As in many restaurants in Quebec the reception is very nice although I will come back on the organization of the service in this restaurant because for me it's a great first to see that! Let's talk about important things! The food ! The buck is this kind of restaurant that is said to offer gastronomy! This word is so important and you have to know how to respect! For me, the leader must know how to respect a number of things that are incalculable! We are a professional who must know his products, master the cuts of vegetables, meat, fire control ... techniques that only a true chef with some knowledge and experience can perform! We are not in everyone's kitchen! Finally I am simply disappointed a second time ... Firstly, the buck knows products and chooses these producers which is a responsible thing and worthy of a gourmet restaurant! But I must say that it stops there! The first starters to arrive are the tomatoes from the Nicolet market and the mushroom puff pastry! A great satisfaction for the mushroom puff pastry, a generous dish that explodes in taste. It's both simple but we like the pronounced tastes, seasoning not too salty that allows the mushroom to unveil! Then the tomatoes of the market! Simply a dish that should not appear on a menu of a gourmet restaurant! For 12 dollars you have 3 slices of non organic tomatoes with a small piece of mozzarella! The tomato is good but really not exceptional in taste! No creativity, no research! It's just impassable that a restaurant that says itself gastronomic can serve that! This is the dish that I present to the family on Sunday! After we have the dishes! Stag burger, beef bib with beer and Cornish chicken! On paper it looks really good :) But the reality is completely different !!!! The chicken was the best dish of the three! I must admit I rarely eat such a good piece of chicken! He was tender! Crispy vegetables! A true delight, if the card does not change I will probably resume this dish so he convinced me :) For the deer burger, the meat was excellent but the meat was overcooked! It explodes in taste but deserved to be bleeding! For the beef, strangely I was told that I absolutely had to eat it medium and not bleeding, that's how the chef's advice! Because it uses vacuum cooking !! I did not really understand the explanation given by the waitress because even in vacuum cooking we can make the bleeding and then go back to the stove! So I did not really understand! The cooking was very medium and ruined the taste of meat! A real disappointment for me who wanted a tasty meat! In addition the meat had this strange lamb that I often find in Quebec and I can not yet explain ... if you understand what I mean and if you have the answer I want to know :)! Maybe it comes that the meat is often mechanically tenderized! The establishment offered us a small Quebec whiskey to forgive mistakes on cooking! Which was very nice of them (Original) Parlons tout d'abord du positif ! Le cadre ! Endroit qui se situe dans le centre de Trois rivieres ! Le restaurant se trouve dans une magnifique maison en bois. La salle est vraiment belle, le bois donne se côté chaleureux qui nous invite à vouloir passer une merveilleuse soirée en compagnie de nos amis à boire une bonne bière ou un bon alcool ! La terrasse n'est pas en reste... considéré comme une des plus belles de TR, je vous conseille de réserver pour pouvoir en profiter ! Comme dans beaucoup de restaurant du Québec l'accueil est très agréable même si je reviendrai sur l'organisation du service dans ce restaurant car pour moi c'est une grande première de voir ça ! Parlons des choses importantes ! La nourriture ! Le buck est ce genre de restaurant qui se dit proposer de la gastronomie ! Ce mot si important et qu'il faut savoir respecter ! Pour moi le chef doit savoir respecter un nombre de chose incalculable ! Nous sommes en fasse d'un professionnel qui doit connaître ses produits, maîtriser les découpes des légumes, de la viandes, la maîtrise du feu... des techniques que seul un vrai chef ayant une certaine connaissance et expérience peut effectuer ! Nous ne sommes pas dans la cuisine de Monsieur tout le monde ! Finalement je suis tout simplement déçu une seconde fois ... Premièrement le buck connaît des produits et choisis ces producteurs ce qui est une chose responsable et digne d'un restaurant gastronomique ! Mais je dois dire que ça s'arrête là ! Les premières entrées à arriver ce sont les tomates du marché de Nicolet et le feuilleté de champignon ! Une grande satisfaction pour le feuilleté de champignon, un plat généreux qui explose en goût. C'est à la fois simple mais on aime les goûts prononcé, l'assaisonnement pas trop salé qui permet au champignon de se dévoiler ! Puis les tomates du marché ! Tout simplement un plat qui ne devrait pas figurer sur un menu d'un restaurant gastronomique ! Pour 12 dollars vous avez 3 rondelles de tomates non BIO avec un petit morceau de mozzarella ! La tomate est bonne mais vraiment pas exceptionnel en goût ! Aucune créativité, aucune recherche ! C'est juste impassable qu'un restaurant qui se dit gastronomique peut servir cela ! C'est le plat que je présente à la famille le dimanche ! Après nous avons les plats ! Burger de cerf, bavette de bœuf à la bière et poulet de Cornouaille ! Sur le papier cela semble vraiment excellent :) Mais la réalité est toute autre !!!! Le poulet était le meilleure plat des trois! Je dois bien l'avouer je mange rarement d'aussi bon morceau de poulet ! Il était tendre ! Les légumes croustillant ! Un vrai délice, si la carte ne change pas je reprendrai sans doute ce plat tellement il m'a convaincu :) Pour le burger de cerf, la viande était excellente mais la viande était trop cuite ! Elle explose en gout mais aurait mérité d'être saignante ! Pour le bœuf, étrangement on m'a dit que je devais absolument le manger médium et pas saignant, c'est comme ça que le chef le conseil ! Parce qu'il utilise une cuisson sous vide !! J'ai pas vraiment compris l'explication donné par la serveuse car même en cuisson sous vide on peut faire du saignant puis faire un aller retour à la poêle ! Alors la je n'ai pas vraiment compris ! La cuisson était donc très médium et gâchais le goût de la viande ! Une vrai déception pour moi qui voulait une viande goûteuse !! En plus la viande avait cette mâche étrange que je retrouve souvent au Québec et que je n'arrive pas encore à expliquer ... si vous comprenez ce que je veux dire et si vous avez l réponse je veux bien savoir :) ! Peut être que cela vient que la viande soit souvent attendris mécaniquement ! L'établissement nous a offert un petit whiskey québécois pour se faire pardonner des erreurs sur les cuissons ! Ce qui était très sympa de leur part

The food is good but expensive for what there was. (Original) Service très long. Serveuse peu sympathique. Nous sommes allé hier (jeudi midi) avec l'équipe de travail. Le menu est très simpliste ce qui normalement accélère le service,mais pas au Buck pub gastronomique. Nous n'avons fait aucune remarque à la serveuse en ce sens puisqu'elle nous a accueilli très froidement dès notre arrivée et sans jamais faire le moindre sourire. Nous avons hésité à quitter pour un autre resto mais puisque nous n'avions que peu de temps nous avons décidé de rester ce que nous avons regretté par la suite. La serveuse ne nous a pas offert de boisson, ni de dessert et de café inclus dans notre table d'hôte menu midi. Je n'y retournerai plus jamais, du moins pour le midi... La nourriture est par contre bonne mais dispendieuse pour ce qu'il y avait.

After a long day of travelling I stumbled onto this unassuming looking pub. It was deceivingly unremarkable from the outside, but once inside it was stunning. It had a large patio surrounded by foliage that gave the impression of a garden. I was solo so I sat at the bar, which was well stocked with microbrews, and cocktails. I had the poisson de moment, which was a fresh locally caught sturgeon, on a bed of savoury lentils and roasted cauliflower. It was fantastic! I also had the fish taco as an appetizer, which was equally good. The staff was very knowledgeable and went out of their way to serve me. They got me an English menu, which I didn't really need, but was nice to have. I highly recommend Le Buck.

Starter of arancini: beautiful presentation. Beautiful execution. Subtle and well balanced flavors. Nice portion. Roquebleu croquette starter: nice plate. Nice portion. In terms of taste though, good, but nothing fancy. I expected a cheesy flavor punch, but it was way too subtle. Some store-bought parmesan fondues are tastier. Buffalo gnocchi: the big disappointment of the evening. Gnocchi don't have the texture of a homemade product. Rubbery and dense, they lacked love. A gnocchi should be light and soft. Sautéing them lightly would also have brought a little more flavor and a slight crunch would have contrasted with the rest of the dish. The braised bison was delicious, but very sparse on the plate. The sauce also lacked a bit of punch. We expected more daring in the seasoning. The generous and well-presented plate, however, had a lot of potential. The flank steak: delicious. Cooked to perfection, delicious sauce. The fries are very good, but they were layered on a good but annoying sweet vegetable puree that was simply placed in the wrong place on the plate. Nice choice and good amount of accompanying vegetables, but the oil used seems to have burnt, giving some vegetables an unpleasant taste. Good accompanying sauce. I took the extra foie gras. A mistake. Nice cooking and presentation, but the quality of the basic product is not there. I threw away a good part of it. For having eaten foie gras in other establishments, this one did not make the weight. The brownie: excellent. Good quality chocolate, delicious fleur de sel caramel, soft brownie. The roasted nuts add a very interesting dimension to the dish. Very nice plate. Nice selection of drinks. In summary, we expected more from a "gourmet" pub. The gnocchi and foie gras weighed in on the final note. This restaurant is definitely better than a lot of others in town and probably the dishes I haven't tasted are delicious, but with the kind of food they offer they could take the level of daring up a few notches. (Original) J'essaierai d'être concis. Visite en couple le 2020.09.25, 20:00. Décor : de bon goût, agréable. Service : sympathique et avenant. Les plats se succèdent a une très bonne cadence. Entrée d'arancinis : belle présentation. Belle exécution. Saveurs subtiles et bien équilibrées. Belle portion. Entrée croquette de Roquebleu : belle assiette. Belle portion. Au niveau du goût cependant, bon, mais rien d'extraordinaire. Je m'attendais à un punch de saveur au niveau du fromage, mais il était beaucoup trop subtil. Certaines fondue au parmesan du commerce sont plus goûteuse. Gnocchis au bison : la grosse déception de la soirée. Les gnocchis n'ont pas la texture d'un produit maison. Caoutchouteux et denses, ils ont manqué d'amour. Un gnocchi se doit d'être léger et moelleux. Les sauter légèrement aurait aussi apporté un peu plus de goût et un léger croustillant aurait contrasté avec le reste du plat. Le bison braisé était délicieux, mais très éparse dans l'assiette. La sauce manquait aussi un peu de punch. Nous nous attendions a plus d'audace au niveau de l'assaisonnement. L'assiette généreuse et bien présentée avait pourtant beaucoup de potentiel. La bavette de boeuf : délicieuse. Cuite à la perfection, sauce délicieuse. Les frites sont très bonnes, mais elles étaient déposées sur une purée de légumes sucrée bonne mais agaçante qui était simplement déposée au mauvais endroit dans l'assiette. Beau choix et belle quantité de légumes d'accompagnement, mais l'huile utilisée semble avoir brûlé, donnant un goût déplaisant à certains légumes. Bonne sauce d'accompagnement. J'ai pris l'extra foie gras. Une erreur. Belle cuisson et présentation, mais la qualité du produit de base n'est pas la. J'en ait jeté une bonne partie. Pour avoir mangé du foie gras dans d'autres établissements, celui-ci ne faisait pas le poids. Le brownie : excellent. Chocolat de bonne qualité, caramel fleur de sel délicieux, brownie moelleux. Les noix torréfiées ajoutent une dimension très intéressante au plat. Très belle assiette. Beau choix de boissons. En résumé, nous nous attendions à plus d'un pub "gastronomique". Les gnocchis et le foie gras ont plombé la note finale. Ce restaurant est définitivement meilleur que beaucoup d'autres en ville et probablement que les plats que je n'ai pas goûté sont délicieux, mais avec le type de cuisine qu'ils offrent, ils pourraient augmenter le niveau d'audace de quelques crans.
