If you are in Banff, and looking to experience the Fairmont Castle and an AMAZING steak house, the 1888 Chop House is a MUST Visit!! We came to the Chop House for our wedding Dinner and our guests raved about the service and the food - Best meal everyone ever had!! Due to COVID, things changed how dinner was supposed to look, and immediately Roxanne P contacted me and eased me through all the changes and made everything stress free!! We used the private dinning room (Angus Room) , and the since the wedding day was so busy, the Fairmont offered to set up the room.. let me tell you, it was more beautiful and perfect then I envisioned. The culinary team and cooks are top notch. The food was excellent - we ordered almost one of everything on the menu and nothing disappointed! You can't have a bad meal here!! The Steaks were AMAZING!!!! Also, Shot out to our Server Nico!! He waited on our group of 12 and everyone had nothing but amazing things to say about him! Nico did such a great job, he was very personable, shared stories about the history of the room and we just had a great time with him. Request him for your group! he's Fantastic!! Thank you to the Fairmont and the 1888 Chop House for an incredible dinner and experience!! We can't wait to come back.

Great cuts! They have an ad around the hotel indicating their butcher knows best and it's no joke. The whole experience was lovely, but the food, specifically the steak was delicious. Oh and the soft mini bun with dill deserves a mention too.

First time eating here today. Came to Banff for my boyfriend's birthday. The food was amazing and the service and staff were incredible. I had the smoked pork chop which was very good. I had a bit of my boyfriend's wagyu steak and that was so worth the money. Our server brought out a chocolate hazelnut cheesecake with a sparkler on it for dessert. Next time I'm back in Banff I'll definitely come back and have the wagyu striploin myself!

Overall a very good experience. The service and the food were both amazing. The steaks were perfectly done and the side dishes were delicious as well. The tenderloin was a bit on a smaller side for an 8oz, but it was good enough. The only issue we had was with the table. We had made the reservation weeks in advance, but they sat us in the back of the restaurant on a table that had terrible lighting (almost wished I had brought my sunglasses). However when we asked for a new table, they moved us right away. Luckily there was a window table available and I am not sure why they didn’t give us that table in the first place. The whole experience was very worth it and will totally repeat if we ever stay in the Fairmount again.

Be prepared to spend money as it is a five star restaurant and it shows. There is a dress code and I would recommend making a reservation. The menu changes day to day so what someone had one night might not be available the next. Definitely a must if you want top tier food in a prime setting.

My brother told them it was my birthday so they even arranged an amazing dessert too. A must try place the meat is absolutely delicious.the best steak I ever had. Highly recommended. Bread and butter, never thought I'd say this, could eat it all day long for every meal. If you can make it for tomahawk steak well worth it expensive but best steak in Alberta chews through like butter

Came with high expectations and left with a lot to be desired. Our group of 7 ordered various cuts (filet mignon, Alberta wagyu, ribeye, bison tenderloin) and most came out overcooked, overly charred, and tasteless. We were especially disappointed with the Alberta wagyu having tried similar cuts from real steakhouse establishments such as Jacobs in Toronto. The cocktails were good, but lacked depth. The sides were standard, mushrooms were especially salty and drenched in a bath of mushroom juice. Aside from the inferior meal, the service was great and our waiter was very knowledgeable and recommended a great wine paring. Sadly will not revisit or recommend this restaurant to anyone!

Great atmosphere, exceptional service and overall great food, However the steak (12oz Wagyu) was over cooked, they took it back and returned with the wrong cut that was a tad undercooked as per the order. Which is better than overcooked I guess. You would think that more attention would be paid when cooking a $100 steak. Don't get me wrong, even when not cooked to order it was a very good steak. The sides we ordered were good, the creamed spinach was under seasoned. I'm usually not this particular, but for the cost of the meal I expected everything to be perfect.

I’m not cheap - but these prices were higher than 2-3 Michelin star restaurants I’ve visited! Completely ridiculous and unjustified for the quality. 27.00 for a cocktail! 20.00 for a Caesar salad that wasn’t fresh or homemade (slopped from a bucket no doubt, store bought croutons placed on top last second) Steaks were mediocre - twice as much as you’d pay at Modern Steak or other high end Steakhouses. Nowhere near as impressive. Pasta was so salty! Unless you want to be absolutely fleeced for your money - hard pass on this one! Service was good though - felt bad for the waiter so decided to leave a review rather than take it out on the poor guy

The service was perfect. Water unfortunately costs $3. They have a great yet very overpriced wine list, definitely a better idea to get at least the half bottle. the breads are delicious. A subtle sour dough and a dill infused brioche, served with the butter of the day. We tried the filet (very good, could have used a saltier bacon wrap of a few crystals on top) and the waygu (we were disappointed some, this wasn't nearly as tender as my filet and also lacked some salt) with the tomatoes (amazing) and lobster mac and cheese (amazing). You have to get the chocolate cake! Definitely worth the visit overall.

The food was exellent. My wife and I both had waygu tenderloin and it was quite possibly the best steak I've ever had. However NO sides come with any steak and they do not make you aware of this. You get a hunk of meat on massive plate and that's it for $78 a plate. I was extremely disappointed by this. Is it too much to ask for some veggies to come with such an expensive meal? I don't think so. Our service was also not so great. Again for prices like that I expect higher quality service that what is offered at your local fast food restaurant. The food was incredible but I won't be back and I'm not sure I can even recommend eating here. All in all we paid $168 for two 7oz steaks, two coca colas, some complimentary bread, and poor service.

I had booked a reservation here at 9pm. I didn’t realize that was also their closing time. I called the staff to ask and they said they close at 9 but close kitchen at 10:30pm. Me and my husband was running late because he had forgotten his digestive pills. It was also his birthday. I asked if we could come at 9:30 instead. The staff told me that they wouldn’t be able to guarantee my reservation and they would cancel it instead. I’m okay with this because so far I have not had a great experience with fairmont services. They don’t go the extra mile for you as a guest. I had had afternoon tea earlier at fairmont lake Louise and had to wait for them for 30mins to seat me due to short staff despite a reservation. But when I am late and calling ahead to inform the restaurant I would be late, they wouldn’t wait for me? I figured by hearing that, it wasn’t worth rushing there on my husband birthday. We wanted steak and walked around for a really long time until we settled at farm and fire. We had the best tomahawk steak there and was able to take some for leftovers. The staff were extremely friendly. They close at 10 but seat us right away at 9:45. They also told us not to rush and made our experience special. Sometimes, the best is not the best and the overlooked can be better than expected. So thank you fairmont for canceling my reservation so I can find a better experience elsewhere.

We had a great experience here after a challenging hike up Mount Rundle. The food was delicious and, Chris, our server was very attentive. I especially enjoyed the appetizers (the scallops and the tartare). The ambience was also excellent.

Went here to celebrate my 15 year wedding anniversary. I knew the place was expensive prior to going so it was no surprise but the quality of food for the price was surprising. I had the 14oz New York Strip $75 which doesn’t come with sides and was worse than an average steak from an everyday chain restaurant. My wife had the duck which she says was bland but good after dipping in the sauce. When ordering the waitress said it would take 25 min because of the way they cook the duck. The food took a long time to arrive so I asked if they had some bread or something to tide us over and the waitress obliged but for $17 for a small loaf of bread and butter. Our food arrived 45 min later and was lack luster to say the least. The restaurant was far below expectations and I will not return. It took us 30 min to pay out because the credit card machine wouldnt work and after 8 tries I was asked to go downstairs to pay at the front desk of the lobby so they could charge it to a fake room and use the machine at the desk. Very very dissatisfied is an understatement. $200 anniversary dinner was a total disappointment. The only bright spot if you can call it that was that the waitress was nice and very knowledgeable of the menu and a great help when ordering. We were the first in the restaurant when they opened at 6:00 got our food at 7:00 finished eating at 7:30 and didn’t get finished paying until 8:00 if you do decide to eat here which I don’t recommend, make sure you have plenty of time. Oh and valet parking is $45.

The 1888 is a very nice steakhouse. Be prepared for the expensive menu, but the food and service are worth it. I shared the 110$ porterhouse with a friend, and along with 2 side dishes, we ended up with our bellies full! The waiter was charming, and could even talk with us in french! If you want to splurge on a AAA evening, the 1888 is a great place!

Great experience from the first moment to the grand finale. The place has a unique vibe, and our guide, Adam, helped make the most out of the experience. The food was cooked to perfection, and we were pretty selective in how we wanted it to be delivered. The waiter was patient and attentive to all our requests, including French Fries that were not on the menu. The fries were served, and I have to say it matched all expectations of crispy and not dry. Starting from beef tartare, we moved to the perfect steak. The place has a fantastic selection of Alberta beef that will not leave you indifferent. Deserts are just as beautiful as they are yummy and are a great treat. Enjoy!

Amazing amazing experience and food. My boyfriend and I were celebrating an anniversary and this was definitely the best place for it. The location is amazing since it's in the Banff Springs and we got seated by the window which made it that much better! Would definitely recommend making a reservation for the main dining room, it was pretty full when we went and I believe because of COVID the hours are shorter (6-9pm). My absolute favourite dish by far was the Benchmark Farms Beef Tartare (Brant Lake Wagyu Beef Option). I have no idea what the sauce was, but it was heavenly. We also shared the Porterhouse and 1888 Burrata Salad which was more than enough for two hungry people. Also want to mention that the sparkling apple cider was delicious. Wish I could celebrate every anniversary here!

Fantastic service, great room. Food was just okay. $70 for a strip loin that I would hesitate to think was even graded a AA steak let alone AAA or Prime. Very tough and lack of flavor. I'm happy to pay a high price for a steak but would like the quality. Menu was very limited but probably due to covid. Excellent wine selection. I would go back but would select.something different on the menu.

We were very excited to dine at the famous 1888 Chop House in Fairmont. What a disappointment! Coming from Montreal, we are familiar with higher class dining and expected more for all the hype. The duck was overcooked, the bison was decent, the side dishes were very poor and the wine mediocre. I normally do not write reviews, however, seeing the inflated google review scores, I wanted to give my input. Do yourself the justice and skip this one.

Ordered the cheesecake brûlée (is not cheesecake or brûlée but it’s good) mango chutney is unnecessary (taste like a salad). Overall a good experience but I won’t come back.

I am a guest at the Fairmont. I called ahead of time and asked if I could walk in at 8 pm to dine and I was told yes I could. I showed up to dine and was told there was no availability and hostess did not bother to ask any questions or seemed to care that we’ve been staying at the Fairmont for 7 nights now. Very rude & unprofessional. Do not recommend.

Wonderful experience - my wife and I shared the Tomahawk Steak. It took over an hour to cook but well worth the wait. Cocktails were amazing and thoughtful. Staff were very helpful and welcoming. We had dined at other "fine dining" restaurants and we agreed this was the most enjoyable during our stay in Banff.

The steaks here were excellent. They were great quality and perfectly cooked inside and out. I felt mine was slightly under seasoned but I also prefer more salt than most people. The sides were absolute heaven and I would highly recommend trying a few as the mushrooms blew us away with how flavourful they were! The ambience is what you would expect from a Fairmont restaurant: elegant, refined, and luxurious. Service is also excellent. The staff are all well trained and on point. Overall we had a great experience here and would come back when we have an occasion worth the price tag of eating here.

What a great experience, and yes including that it is a little pricey. I will explain that having been to a number of Steak house including establishments like Morton's that this place really takes the cake. Yes the staff are great and interactive and have real personalities, yes the Steak is great too. What is exceptional is the sides are not an afterthought. The Mixed Green's (this evenings were a mix of different beans) we had with our Steaks had incredible unforgettable flavour. The Mushrooms again, just far better in flavour and variety than I have experienced. We all go to Steak or Chop Houses for a great Steak but I love that we left here talking about how wonderful every aspect of the meal was. The service and Atmosphere were great and compliment the Hotel experience overall but it was the overall emersive food that had my wife and I still talking about it a day later. I highly recommend this restaurant, it is not inexpensive however keep an open mind to how well the entire evening is delivered. Sadly it was so good, I didn't get many pictures.

We had one of the lower end bottles at $170 that you can buy for $69 on line. Whilst I understand the need to make a profit on some area this kind of mark up leaves a customer feeling ripped!

Best steak I have ever had in my life. Worst service I have ever had in my life. I came here during the summer time with some family who were visiting from Ontario, celebrating my mother in laws birthday. Our servers name was Sharon. It took our server at least 45 minutes to get to our table after we were seated, which lead to the manager of the restaurant to stall, showing us a cart full of wine, basically giving us no choice but to agree to spend over $100 on champagne that we didn't even care for. Once our server finally got to our table she was so rude I was appalled. Very unwelcoming and tried to rush us through our dinner, made my boyfriend feel bad for asking for a straw and didn't even end up bringing him one, there were more than one incident like this. And I must mention, not one person wished my mother in law a happy birthday (KNOWING we were there celebrating), meanwhile the table right behind us got a complimentary birthday dessert with candles. The only reason I gave our server a tip is so the kitchen would get their part. The porterhouse steak was unbelievable, I don't know if I will ever taste a steak like that again. Very unfortunate that this poor service is the reason I will never return.

Absolutely prefect experience. Everything was top notch from the start to finish. The restaurant sits inside the world famous 'Castle in the Rockies' with beautiful decor and atmosphere . Our server Adam was amazing! His knowledge of the menu and meat in general was impressive. He helped guide us in our ordering. He checked in at the prefect time every time and was so attentive. He even kindly guided us on how to eat one of the appetizers to ensure we mixed it properly as it was set that way for presentation only. We had the beef tartare and crab cakes. Out of this world delicious! Then went on to the bison and tuna which is the best bison I've ever had by a mile. The side of whipped potatoes where an absolute delight and an experience in themselves. I can clearly say this was the best meal of our lives. We eat out regularly and aren't afraid of fine dining, so we know good food when we have it. Now keeping in mind this place is very expensive, with many items near or over $100. But you get what you pay for here, a 1 of a kind dining experience in a 1 of a kind hotel looking out at the best views mother nature can muster.

Service is a+ and extensive wine selection (a little bit overpriced). Had the tomahawk for 2 (never had such a delicious and generous portion). Sides (mushrooms, asparagus, mash) were bland. Heirloom tomatoes salad was way too small and more than average. Worth going for a special occasion for the setting & service, but you can easily find a better steakhouse.

Went to this restaurant last night and both my husband and I had the wagyu striploin. Today we are both sick, vomiting and diarrhea. Our one year old infant who did not have any of the beef is fine, thank goodness!! We’re celebrating New Years by lying in bed. For an expensive meal, we are extremely disappointed and will never go there again!

Place was beautiful. We were seated very quickly. Placed order. There was 4 of us and we both ordered the tomahawk steaks. When our dinner came we told them the table was too small but the server said it was big enough. When the food was put on our table and the plates were hanging over the edge. We were told are it fits. We made them bring another table over and we had to help with the table. This restaurant is high class and expensive so you would expect them to put the tables together for us but that did not happen. The steaks were amazing but the sides were horrible. The chef can cook a steak but he cant do potatoes or mac and cheese well. Overall experience is not what you expect. Would never return

Booked a last minute birthday dinner here and didn't regret it. Fantastic hostess service seated us early. Bartender's complimentary pineapple hot toddy was a welcome warm-up. Wine selection was almost too much. Almost. Featured appetizer was delish. Food was exquisite. Adam, our server, was knowledgeable, personable, and attentive. 4 words: Tom Mo Hawk Steak, anything else is not worth it, unless you are Vegan, then I'm not sure how you'd rate the food (carrots were spectacular). Be sure to make a reso so you get seated in the actual restaurant and not out on the balcony where everyone walks past you as you eat. Will eat her again.
