For my online solo booking of 18:00, I chose the great restaurant. I arrived at 17:55 this Sunday, August 25th. Four guests on the terrace; some at the bistro. Seeing a bistro table by the window, I tell the waiter that I'm fine. He replied that it was reserved even if no sign announced it. I let him know, without success. I later understood that I was in a restaurant with a rustic mentality of the sixties where the solo client is discredited: an urban campaign mentality or country town (to choose) that needs to be aligned on the twenty-first century by sending his staff to do an internship in Montreal, just to see where Humanity is in its evolution ... The waiter offered me the big restaurant where a table near the window was available. I approved. This large restaurant is rather small but this section is more opulent than the others. A group of five fat-laughing people was already present. At 18:05, my choice of table d'hôte ($ 44) was made for an appetizer of foie gras, the soup of the moment, the dish of scallops and shrimp flambées and, in lieu of dessert, a plate of cheeses. A $ 9 supplement was required for foie gras and a $ 6 supplement for cheese. As wines, I chose a glass of pinot grio Jackson ($ 8.50) with the entrance and a glass of white St-Véran bio ($ 15) for the rest of the meal. The order given, I had to wait 40 minutes well counted to finally receive the input of foie gras. I should have left after 20 minutes of waiting because it was only the beginning of an indigestion of unacceptable delays. After the completion of the entrance, 10 minutes wait for soup and another 10 minutes for the main course. The deadline to have the cheese was 30 minutes, still well timed, and another 10 minutes waiting to receive the bill after the completion of the cheese. So, a total of 100 minutes waiting for a meal that took place until 20:35, or 150 minutes of presence at the Intimist where 2/3 of the time was waiting for Godot. I was expecting, too, that I get the new buzz phrase of the "staff shortage" and it did not fail! The kitchen was obviously pointed at where I was told that there should have been three chefs instead of two. However, when I arrived, it was pretty desolate in all three sections and I got a first 40 minutes wait. On the other hand, a 30-minute wait for "someone, somewhere" to cut cheese is rather hallucinating. In landfill, I was entitled to the cheese plate without supplement ... on a total invoice curling the 100 $. The food was excellent. The outbreak of scallops and shrimp, topped with smoked salmon was delicious. Was this verdict induced by over-salivation due to delays? I do not know and will certainly not check my perception by presenting myself again at the Intimist ... (Original) Si vous avez le temps…pour un repas digeste et des délais d'attente très indigestes. L'intimiste offre trois sections pour les repas : une terrasse, un bistro et un «grand» restaurant. Pour ma réservation solo en ligne de 18h00, j'avais choisi le grand restaurant. Je suis arrivé à 17h55, ce dimanche 25 août. Quatre clients à la terrasse; quelques-uns au bistro. Voyant une table du bistro près de la fenêtre, je dis au serveur que ça m'allait. Il m'a répliqué que c'était réservé même si aucune pancarte ne l'annonçait. Je le lui ai fait savoir, sans succès. J'ai compris, plus tard, que j'étais dans un restaurant avec une mentalité rustique des années '60 où le client solo est déconsidéré : une mentalité de campagne urbaine ou de ville campagnarde (au choix) qui aurait besoin d'être alignée sur le XXIe siècle en envoyant son personnel faire un stage à Montréal, juste pour voir où l'Humanité est rendue dans son évolution… Le serveur m'a donc proposé le grand restaurant où une table près de la fenêtre était disponible. J'ai agréé. Ce grand restaurant est plutôt petit mais cette section est plus cossue que les autres. Un groupe de cinq personnes aux rires gras était déjà présent. À18h05, mon choix de table d'hôte (44$) était fait pour une entrée de foie gras poêlé, le potage du moment, le plat de pétoncles et crevettes flambées et, en remplacement du dessert, une assiette de fromages. Un supplément de 9$ était exigé pour le foie gras et un supplément de 6$ pour le fromage. Comme vins, j'ai choisi un verre de pinot grio Jackson (8.50$) avec l'entrée et un verre de blanc St-Véran bio (15$) pour le reste du repas. La commande donnée, il m'a fallu attendre 40 minutes bien comptées pour enfin recevoir l'entrée de foie gras. J'aurais dû quitter après 20 minutes d'attente car ce n'était que le commencement d'une indigestion de délais inacceptables. Après la complétion de l'entrée, 10 minutes d'attente pour le potage et un autre 10 minutes pour le plat principal. Le délai pour avoir le fromage fut de 30 minutes, encore là bien minutées, et un autre 10 minutes d'attente pour recevoir la facture après la complétion du fromage. Donc, au total 100 minutes d'attente pour un repas qui s'est échelonné jusqu'à 20h35, soit 150 minutes de présence chez l'Intimiste où les 2/3 du temps fut d'attendre Godot. Je m'attendais, aussi, à ce qu'on me sorte la nouvelle phrase buzz de la «pénurie de personnel» et ça n'a pas manqué! La cuisine fut évidemment montrée du doigt où on m'a dit qu'il y aurait dû y avoir trois chefs cuisiniers au lieu de deux. Pourtant, à mon arrivée, c'était plutôt désert dans les trois sections et je me suis tapé une première attente de 40 minutes. Par ailleurs, une attente de 30 minutes pour que «quelqu'un, quelque part» coupe du fromage est plutôt hallucinant. En décharge, j'ai eu droit au plateau de fromages sans supplément…sur une facture totale frisant les 100$. La nourriture était excellente. Le flambée de pétoncles et crevettes, surmonté de saumon fumé était délicieux. Ce verdict était-il induit par une sur-salivation due aux délais ? Je n'en sais rien et n'irai certainement pas vérifier ma perception en me présentant de nouveau chez l'Intimiste…
