Best ramen I have ever had in Toronto!! Brought back fond memories of eating ramen every chance I could in Japan. The chef and owner was an absolute pleasure as well - we had a wonderful time talking to him about Tokyo, where is from. I would highly recommend visiting Nobuya ASAP and supporting this local gem. Make sure you eat in house rather than taking out to get the true experience, as it’s best when fresh!

The experience here is what shone at this one man shop. After visiting a haunted house, Martino Manor some friends and I decided to look for a place with small bites to fulfill our peckishness--standing in the cold for over an hour really encouraged hunger ???? After looking on google we settled on heading to Nobuya and to our surprise it was a very cute shop. Known for their ramen (which we did not have as we had dinner previously, but we will definitely come back to try). Instead we feasted on small plates, Japanese poutine (which was not small but shareable), karage, matcha cheesecake and yatsuhashi. We got there after 9pm, at the time only one other table was occupied but it is only a 4 table shop so it is very quaint and personable. The Leafs game was on, a few Toronto team sports memorabilia donned the wall by the TV, a soccer jersey hung which gave it a bit more character ☺️... I love the idea of being able to watch sports and snack on yummy delicious snacks. It is a great place to hang out and chat with friends, maybe even a date ???? The dishes were great. We were happy, warm and full! On top of it all the chef had comr over to chat with us too, he introduced us to the yatsuhashi and we learned he has beem operating for 8 years. The name, Nobuya stands for his name and 'ya' means store. We cant wait to go back and try the ramen!

Outstanding ramen. Needs to be in the conversation for the best in city. Easily the most under hyped. For context I've eaten ramen in NYC, SF, and all over Toronto, but not Japan. This was likely the best I've ever had. The service is slow, as it's a true one man show; with the super kind owner taking orders, bussing tables, and making every dish with great attention to detail, all by himself. Knowing this was the case in advance, we embraced the pace and enjoyed every bite of our food. Others - more experienced - even brought cards to pass the time, knowing the wait was well worth it. If hanging around a small ramen shop isn't your thing, order takeout and wait it out at home. Either way, if you're reading reviews considering giving this place a try... Just do it.

We moved to the neighborhood and was excited to try Nobuya which is 3 minutes from our house. I arrived at the restaurant with my husband and my 2 year old. After trying to order what was on the menu I was informed there was no rice available and I has two options, both weren't suitable for a two year old. We placed an order for one main and one appetizer. The man there said that was too little and we should order more. I explained that we hadn't been there before and wanted to try it. He then proceed to tell me he didn't want to serve us because we ordered too little and and my son was too busy for the restaurant. Considering he only gave us two options of food and there was no one else in the restaurant, I will never order there again.

First time at Nobuya. It came highly recommended from my son. The food was amazing! Really amazing and authentic. Tried Japanese cider which was delicious. The owners were so nice and cared so much. Easy to miss location which is too bad because I’ve been to lots of Japanese restaurants but this was the best by far. You have to try Nobuya. Best Japanese restaurant in Toronto!

I have been wanting takoyaki and okonomiyaki for ages. Was happy to find Nobuya had it in the menu! It was just as delicious as I had imagined. Nobu was a very good host and an excellent chef!! There was a bit of a wait, but the food is so amazing you will forget you waited for it. Really really excellent

I have been wanting to try Nobuya since hearing about it on the CBC some years ago. We ordered gyoza, takoyaki, and tonkotsu ramen...Everthing was delicious. As others have said, this is a one man operation. Due to Covid, we called ahead to order for pickup. It took about an hour for our order to be prepared, but it was well worth the wait. Will definitely be returning soon, hopefully when dine-in is available.

Wow the ramen and food in general here is amazing! The owner is such a cool guy as well, had a good chat with him. One thing you must know is that the food takes time to come out, and I mean it took a while. The owner tells you that up front and there's a sign that says it's worth the wait. It is. Go here if you can wait a bit to eat while conversing and having a drink. If you go starving, you will die of starvation. Not really, but keep that in mind. Location is in Mimico, but it's a nice little spot. It's a tiny place. Worth the wait for sure.

We were lucky cause we didn’t have to wait at all. Food was good but the ramen is a bit too oily. Owner is very friendly and nice. Perhaps if he hires just one staff to help him take care of serving and cashing would be good.

I was so excited to check this place out after hearing reviews however it was very disappointing. When we first walked in there were three tables with 4 or 5 people total, one of which already had their food. Owner comes out saying it’s too busy for anyone else. Then we say we don’t mind waiting, as he’s taking our orders we wanted just a bowl of ramen each as neither of us have a large appetite and we bring our own water everywhere out of habit. He says we have to get a drink, appetizer and main each. Which for us is a huge waist because we wouldn’t even finish ramen if that’s all we got, we are just both small and so not eat much in one sitting. wanting to try We had the chicken appetizer which was extremely bland, mashed potatoes which was actually tasty, bottles of water and our ramen. The ramen was very salty but not actually any flavour in the broth at all and the noodles were just your standard dried ramen noodle. When you have a 1-2 hour wait during a slow time, I expected fresh noodles at least.

Very endearing restaurant. The owner does everything himself, a one man show but the dedication to great service is unmatched. Very welcoming and very friendly, like a neighbour or family in an unpretentious atmosphere. There is a wait for food because it is literally 1 person doing everything, but with more support I'm sure that will change in the future with additional staff! The ramen is a great choice. What a wonderful eating experience. For one man to be able to create such delicious food and so quickly is truly a amazing. 2 of us came In for ramen and some appetizers. Food did not take long at all to come out. The owner is extremely friendly and passionate about his skill. Nice place. Referred to us by a friend. Certainly doesn't look like a restaurant but the owner makes you feel like home. Food was a bit on the pricey side compared to other Ramen restaurants. The food took a little long to get to us but we walked in as soon as he opened & there was 5 of us so understandable. Can't knock this guys effort. He was a very nice man who treated us with respect & served us a nice meal. Hope to go back soon!

The food here is some of the best Japanese food in the city. The takoyaki is pillowy soft and melt in your mouth. So good!! The place is run by one man who is a chef here from Japan, you can tell he puts his whole heart in the operation. When you enter the restaurant he treats you like a close friend. A gem in the city, everybody should try at least once.

Glad to finally have tried this place after hearing nothing but good things, and sure enough, everyone was right - the one man show is the real deal. We ordered the okonomiyaki, the gyoza, and the ramen. There was so much detail in everything Nobu-san made. The okonomiyaki was served with two perfectly runny eggs on top of a bed of udon, with all the fixins. The gyoza’s dipping sauce had chopped garlic within it!!!! That broth in the ramen...holy moly. With all that detail though, yes, there is a wait, but call ahead and you’re good to go. 1000000% recommend!

This is one of the best Japanese restaurants I've been to. The owner is incredibly nice and very friendly. The food is phenomenal!! We had the karaage chicken, gyoza , chicken katsudon and Tokyo ramen. I recommend them all. I will most definitely be back soon. Call before going to make sure it is open.

Ordered the spicy miso ramen and takoyaki . Crispiest and tastiest takoyaki in GTA. Spicy miso soup was flavourful without too much salt. I look forward coming back!

Wow! The takoyaki and Kara age were the best I’ve had in Toronto. Tonkotsu Ramen was delicious with complexity and nice layers of flavours. Very fast and super friendly. The building is so nice too. Very lovely spot to not rush too if you feel like taking your time. Parking is behind the restaurant.

First time to try this place and it didn't disappoint. Felt we came back to one of the small ramen places in Japan, with a taste of Toronto. Takoyaki was amazing as our appetizer. Shio Ramen and Karage and Chips weren't bad either. Decent Japanese place, friendly owner, good food. Although parking is free, it's just not so busy around the area to notice the place. Nobuya's ramen shop is a Mimico gem! I had the tonkotsu ramen and my girlfriend had the miso ramen. We also ordered the chicken karaage. The tonkotsu broth is definitely among some of the best I have had and the chicken karaage was out of this world. I am happy I stumbled upon this place and will be back for more!

As someone who misses Japanese food after living there for a year, this place really hits home! One-man operation where he does everything from taking orders to cooking to packaging it all up. Very nice man who cooks some killer food. The Ramen and Takoyaki were my favourites but everything was great. He even makes a killer matcha cheesecake! Wow! I highly recommend checking out Nobuya! The hours of operation can be hard to follow but they post it on their Instagram as well. I can't wait to come back and dine in the restaurant when covid is over. ありがとうございましたのぶやさん ごちそうさまでした!

My partner and I came here for the first time and both agreed that it's the best Ramen and karaage chicken we've ever had! The Takoyaki balls were delicious as well. You can taste the love in every bite. This restaurant is a one-man show - the owner is the cook, the server, the hostess, etc., so it does take time for the food to arrive, but 100% worth the wait! Regardless of how busy the owner is, he makes an effort to speak to you and makes sure you have a good time. He is incredibly humble and sweet! If you come here, plan to stay for a while, have a good time, and come hungry! Ps. The original Japanese soda is worth trying.

Me and my family went to this establishment and we were greeted poorly. The guy working there told us that we had to order one main dish each customer (we were two adults and one child) and appetizer wich was ridiculous and over priced. He had no patience and he asked what we wanted to order when clearly we haven't seen the menu. I hope this review helps some people looking for authentic Japanese food and good costumer service

Hidden gem in etobicoke! My wife and I have had a hankering for delicious ramen. We visited Nobuya and were not disappointed. We were greeted by the owner who is very friendly. He really makes you feel at home. We started with the Octopus Balls and they were incredibly delicious! Crunchy on the outside and soft on the inside. We then tried 2 types of Ramen. I had the Spicy Miso ramen and it was SO good. Nice and spicy. Highly recommend everyone to check out Nobuya!

I called in ahead to reserve for birthday celebration with a group of 6 persons. Even though it was just the owner workingwith a fairly big group of orders, he welcomed us very warmly and allowed us to come as a group of 6 and made our orders in a timely fashion to the best of his ability. He did let us know ahead of time wait times might be long. Very great customer service, asking whether or not we liked the food, and being compassionate enough to allow us to eat our birthday cake we bought from outside in the store as well. The broth is one of the best we've tasted, alongside with the appetizers we ordered. It is quite busy for a family local business so expect to wait a bit longer for your food. However don't let this discourage you since it is well worth the wait and the warm + friendly experience you receive. Note once again it is just one person working (as of now that I write this) and managing everything (payments, cooking, customer service, phones, etc...) so please be mindful and courteous that the owner is doing his best to create only the best experience for you, and my group definitely saw the passion he had for his restaurant. I highly recommend this over any chain ramen restaurants, and it was our first time here despite after many attempts of trying to come here but due to it being so busy and far from us (40 minute drive). The best experience yet.

The fiance and I was craving ramen for dinner. The sad news was our usual place was close for Sunday's. So we search and found this restaurant. The place seemed busy, but the gentleman still did a great job. The food tasted super great, and very filling. Price is absolutely right. The unfortunate events of today(covid-19), we couldn't experience the dining in the restaurant, we highly recommend this place.

My friends and I decided to come here for dinner after spending the afternoon having a lakeside lunch picnic. It's a small shop but very cute and the gentleman running the place is very sweet. I believe he was working alone but he did a great job at making sure my friends and I along with a few other diners were well taken care of. The food was tasty and good portion sizes. Ask him what desserts he has that day, when I went he had matcha cheesecake and doroyaki which is like a filled pancake! We enjoyed our time here and it's a great spot to dine at if you're in the area.

Finally had a chance to check this place out. I always see Nobuya on my way to work but never had the chance (or time) to visit until today! The owner was nice and welcoming and the place is very cute! Because he is working alone, it does take a bit of time to get your food but as many has already stated...it is worth the wait! I ordered the Tonkotsu Ramen for myself and my family and my gosh the broth was really rich in flavor and the amount of toppings he gives you is worth the money! Many ramen places I've been to gives you like two or three small pieces of meat with some other basic toppings but this place really covers your ramen with toppings! Even my mom who is a bit picky enjoyed the ramen! I can't wait to go back and try his other menus! Support small independent restaurants if you can!

Okonomiyaki and tuna donburi were down-home delicious. Very comforting food. All done by Nobu himself, who is incredibly kind and welcoming. My friend and I were carrying a couple of tables someone tossed out through the night. We just missed our bus, and once we turned the corner, someone jumped out of nowhere and asked us if we are hungry. This is how we met the owner of Nobuya. After five minutes of chatting we got under the spell of his story and it lingered with us on our way back home. When I finally tried Nobuya’s food and experienced the service, I thought to myself that this is the place I was looking for for a long time now. While missing Europe’s cozy spots to eat and chat, I have finally found the place that has the same special energy in Toronto. I was looking for such an authentic place for a long time! Very grateful for this experience. It’s a small spot, a one man show, and the sincerity of the owner makes it worth the wait for the filling delicious meal.

Nobuya is gem. The stock is boiled painstaking by one man, Nobuyuki, who also does the serving, prep, cooking and cleanup. He basically has the best soup in town. Flavours of chicken, pork, garlic, ginger and soy.

Great ramen and easily the best in etobicoke, you can see how much care he puts into his food. The karaage was amazing as well and perfectly cooked. When I came, he was very busy so the food came a little slower but I guarantee you that it's worth the wait. I'm sure next time will be quick and just as delicious. My wife and I visited Nobuya for the first time last night. It was quite busy and waited for a long time but there is no problem as the staff explained the waiting time when we arrived. The takoyaki and Karage chicken were the best I’ve had in GTA. Tonkotsu Ramen was delicious with complexity and nice layers of flavours. The building is so nice too. Very lovely spot to not rush too if you feel like taking your time. Parking is behind the restaurant.

Very friendly atmosphere. Its a one man show but the gentlemen is very friendly and really cares about giving you an honest wait time. We were quoted about an hour to receive food which was pretty accurate. We got two bowls of ramen (Shio/Spicy Miso) and gyoza. The ramen was rich in flavour and had a lot of pieces of tender pork. The gyoza was crispy on the bottom and the filling was flavoured slightly with onion. Highly recommended if you are looking for a cozy date spot or a place to catch up with friends. You’ll have a lot of time to chat and connect :)

Owner was friendly and nice but is perhaps the worst Japanese food I’ve had. He warned us ahead of time that it would be a long wait. We ordered the karage, takoyaki and Okonomiyaki. The karage did not taste fresh and was not like we expected. Typically it is much more crispy and fried. The takoyaki is below average and the Okonomiyaki was alright. Everything tastes the same, there was the same sauce for everything. Payed 4$ for a Yogurt drink (which was my favourite thing there) and charged us 3$ for hot tea. There is no water available, you have to pay for bottled water, which at the time he had run out of. He clearly has water available as he was able to give us hot tea. Ambiance was nice and the shop was very cute. We liked how the menu and signs were both in Japanese and English. Not sure how the reviews are so good but the food definitely is not worth it.

Nobu is a fun guy! Came in for a late dinner on a Saturday night. The takoyaki - bigger than average and very delicious. The tonkatsu shoyu ramen had a rich broth and generous portion of pork. Patience is its own reward when it comes to a place like this. The setting is casual, and the spicy miso broth, along with the takoyaki, is one of the best meals I've had in a Japanese restaurant. Do expect to be waiting there for awhile, because the owner is operating a one-man show and working hard to get out fresh food to you. Think of it as a sort of family dinner. One person is cooking many different dishes for a variety of people, and it will take a wait to get the best food that they can to feed your hungry stomachs. Patience is its own reward at this restaurant, and the food is well worth the wait.

Yes, you need to be patient and understand this is a one man show taking orders, cooking, etc. So long as you are not in a rush you will have a wonderful meal at Nobuya. The service is incredibly warm and friendly. Food is on the more expensive end but I think it's worth it. From appetizers to ramen it is all delicious! Ramen broth is so warming and flavourful. We have been twice and will definitely be back again in the future.

A small corner shop in a quiet neighborhood serving authentic home-made ramen full of flavour. Visited on a Sunday evening - 2 tables outside on the patio along with some seating inside Ordered Spicy Miso Ramen and Gyoza The broth was absolutely amazing, not watery with a great balance of flavour and spice. Please be mindful that this is a one-man shop so there might be a bit of a wait BUT the quality you receive for your patience is beyond what is ordinarily served and well worth the extra time. Had Dinner there, we tried many things on the menu, everything was delicious. It was very nice to find the ramen wasn't overly salty I would like most other places in Toronto. And the ramen bowl came with substantially more meat then I'm used to from other places. Yes this is a one man show, so you do have to be patient, but the owner is very nice to warn you of this when you sit down and takes your order. Very friendly owner, and takes time with each customer. He could easily expand and open another shop and be busy all the time.

I wanted to give 4.5 but there's no such option and it's closer to 5 than 4. Wonderful little spot we discovered because we were in the area and had a hankering for ramen. When we came, the owner was the only one working and he was super short staff so service time wasn't optimal but he ran around and managed admirably. He was doing everything including cooking by himself so that was impressive. The Okonomiyaki was delicious, the pancake was filled with seafood flavour and aroma and the yakisoba were tasty with a wonderful springy texture. Ramen was above average but not as good as Kinton, Sansotei or Misoya. The noodles were a tad overcooked, wish it had the same springiness as the yakisoba. The meat was lean so it wasn't soft and tender but the broth was rich and full of flavour. We would definitely come back. P.S. he's not yelling at you, he's just very loud and enthusiastic when he talks.

I saw many of the reviews for this place after, when I was waiting. I must say that there are many positives, the gentleman who owns the place is extremely nice, very welcoming and friendly, the place is small but cozy, it works. The gentleman was very honest, he said the wait would be long, but that the food would be good, he pointed to some other patrons and said they've been waiting around 2 hours, I thought it was a figure of speech, it wasn't. We didn't have to wait that long but all in all we were there close to two hours from the time we arrived to the time we left. Our food took about an hour and 15 minutes to arrive. I would say it’s unacceptable but, he did say it would take long and we chose to stay. Having said that, he is literally a one man show, he does everything. He’s very hard working but needs to hire more staff, I think the majority of people appreciate his hard work and a reasonable wait would be acceptable, I will come back, but now I have to plan to be there for several hours and sometimes I just want to grab a quick bite. We ordered 2 Ramen, 2 Danbouri, Gyoza and Tokoyaki. A few Japanese soft drinks which were different but good, the bill was very high for what it was. The ramen was ok, the pork in the Ramen was chewy which it's not supposed to be, the broth was ok and the noodles were a little soft but ok. The kids had the Danbouri, the portions were large but I do consider this a little on the expensive side. If you factor in the wait, it's not worth it, despite that I may return considering the gentleman was nice and was extremely appreciative of the wait and thanked us for our patience. I will probably come back, just not sure when.

I love it. Let me tell you why. I and my wife went to Japan last year on October for about 8 days. Since we came back, we refuse to eat Ramen again because the Ramen in Japan is so great and delicious, but it is almost 1/2 year already and we decide to find a place to give it a try again. Nobuya on our list because of the review and nearby our house. We came here at 6:30 p.m. the owner/chef told us will be a long wait before foods are coming because it is one man shows. We decide to seat down and wait and worth it. The spicy miso ramen and pork tonkotsu ramen are excellent. I believe this is one of the best ramen in my city so far I ever try. At the end, when we are leaving, the owner is sending out all the way to front door with big smile, and a free bottle water to us as well. Excellent foods, friendly service, fair price for the taste and size. The only thing you must remember when you come to this place, it is taking time for foods to come to your table so be at least couple hours for your dinning experience. Not a place if you want a quick ramen or in hurry.

Nobuya is a fantastic ramen restaurant. I had the Tokyo ramen as suggested by Nobu, and it was amazing. The broth is cooked to perfection, so savoury and aromatic. However, I think the star of the show is the pork. This was the best ramen pork I've ever had (if you're from Toronto, even better than Konjiki). It's true the wait can be a bit long, so just be prepared for that as Nobu works alone. In the end it's well worth it!

I just visited Nobuya.As you already know it is a one man show. Nobu San has perfected the art of preparing the perfect ramen.Pure delight. I have traveled extensively all over Japan and I can tell you that Nobuya outshines the ramen shops in Japan.Please be considerate when you visit and allow ample time-Nobu San is all by himself! The gyoza were perfect-soft and moist.The prices are a bit higher than in other ramen shops(17.00 and 18.00 dollars), But the products are of very good quality, The meat is more than in the other ramen shops and the size is generous,so every cent you spent is well worth it.Thank you for the great experience,I would give you 10 stars if I could! Very good food, the gentleman that runs it is on his own 90% of the time which is very hard to run a restaurant like that and he does a very good job! People around the area come back time and time again and I can see why. The real-life Masutā! I had a great time dining here, the croquette appetizer was especially delicious. Made to order, right out of the deep fryer. The ramen was also great for a hearty meal with an abundance of garlic-onion-ginger aromatic flavour. The only bummer was the no-water service, but the available drink options were great.

“It’s worth the wait” I ordered the Tokyo Ramen on a hot summer evening. It was a small, hole-in-the wallesque ramen shop in New Toronto. During the COVID pandemic he was only reduced to himself manning the cooking, prep, and washing of dishes for the entire shop. This would mean our meal took about 20 minutes to prepare and be served. Even with this handicap he is still able to make delicious and excellent ramen on his own. Authentic Ramen with a warm touch to it. The draw backs to it though are the small dining area, he apparently didn’t have water at the time we went there, and no AC. If you’re passing through, live in the neighbourhood, or want to try all the ramen shops, this is definitely worth the try.

It's not a sushi kind of restaurant but that's the strong suit of this unique fusion of Japanese and Western style dishes. Every dish was delicious in its flavours; beautiful presentation. Service can be very slow, but the food is worth the wait. There were no booster seats or high chairs so we had to improvise with our stroller. All in all, chef Nobu's warm and friendly personality make the restaurant feel like a long time neighbourhood fixture in a small town, and you feel like a regular - even on your first coming experience! Biked here all the way from North York after hearing about it on CBC Radio. I got there a few minutes before opening on a Friday evening, and got to chat with the very friendly owner. Having recently come back from Japan, I have been disappointed with some of my regular ramen joints in Toronto, but Nobuya delivered. Takoyaki had some of the best batter consistency, and while they were served fresh off the plate, I could still taste the exquisite flavours akin to the ones I tried in Osaka. And the ramen had rich and fatty broth with plenty of toppings, with some of them very unique to Nobuya. I usually tend to stay away from Shoyu ramen, but this was hands down one of the best I had. I highly recommend that you go right at opening as it gets really busy and you get a chance to chat with the owner.

One man show, and you will wait! Yes, we waited 2 hours for our Ramen to be served. We ordered the Okonomiyaki which consist of noodles, fried eggs, seafood pancake, and a special sauce. For the Ramen, we got the Tonkotsu and the Shio. Tonkotsu has a more creamy taste, while the Shio is on the saltier side. Despite waiting for a long time, this is my top 5 Ramen joints in the city. With a joint like Nobuya, I hope that he hires a person to help him out. The place small but cozy. If you have time to kill make sure to check this place out.

He owner/chef harassed and chased and pushed two women walking alone at night because they did not want to eat at his restaurant when the establishment was already 20 mins past closing. Nobu is such a sweet man and you can tell he cares about his profession. This one man show isn’t a gimmick, the experience was delightful and the food was exquisite. We've passed by this place a few times and weren't sure what to expect from the outside, but it was a really pleasant surprise. The space is super comfortable and cozy, the owner is friendly and he seems to run the place on his own! The food not only looked amazing, but the taste was awesome. We got vegetable gyoza and takoyaki to start, and his house-made sauce for the gyoza was delicious and savoury. Then we picked up the chicken and pork rice plates, which were fully garnished and had these really distinct flavours that blended together to make a truly unique experience. Definitely going back soon.

Excellent food. I went with my fiancee on a Friday night, and we grabbed a table outside. The Chicken Karaage was juicy, tender, and delicious. Definitely stands out amongst other places I've tried. We also ordered the Tonkotsu Shoyu Ramen and the Okonomiyaki, and they were excellent as well! Yes, it is a one-man show here, but he is very friendly, and is upfront about the wait times. The food is worth the wait though. A must-try and hidden gem in Etobicoke!

I had so much fun trying this place that has been on my list for a few years now. Its really out. If the way for me but it was worth the trip. I wanted to try this place because it is owned and managed by just one person. I wanted to try the ramen pork broth that he makes and the other items on his menu. I ordered the takoyaki, gyoza, Tonkatsu ramen and the shio ramen plus a light dessert. The takoyaki was nice and large. It was made very fluffy and delicious. The gyoza was very light yet flavorful. Both were just enough to tease your taste buds as you waited for the thick pork broth ramen. The ramen is a must try. It isn't too rich nor too clean. It was a perfect mixture of simple ingredients and textures and flavors. It cannot be compared to restaurants like Kinton or Konjiki as the broth and style is very unique on their own. This. Broth was very hearty, very dense in flavor, and very rich in taste. Thick cuts of pork complement the noodles and toppings. This style is made with mashed onions, minced garlic, ginger, seaweed prepared 3 way, and Japanese spice seasoning. Once mixed, the textures and flavors in the broth go so well with the thin ramen noodles. Personally I preferred the tonkatsu over shio as I prefer to taste the broth. But I think everything on the menu is worth trying. Will definitely visit when I'm in the area. The owner is super genuine and passionate about his food. He genuinely appreciates his customers and really shows it with a smile on his face every time.

It is kind of ridiculous. 2 hours to get 2 bowls of ramen and an appetizer. Went in at 815 pm didn’t leave til almost 1030. The food was average, I would eat it again but the price doesn’t match the quality. You can go anywhere for cheaper and faster wait time for just as good if not better quality of food. The man was nice and warm as a host but nothing that would have me come back. I would never go there with more then one other person. It would be a nightmare ordering with 3+ people. Not worth it.

It's clear that much time and effort has gone into the preparation of food at this place. In particular, a lot attention was paid to the different broths for the ramen, which were delicious and unique from other ramen shops in the area. Noodles were a bit soft for my liking; I prefer them with a bit more bite. Overall, a good meal made memorable by the broth. However, as this is a one-person operation, expect to wait a significant amount of time during dinner; the owner juggles both front of house and the kitchen. This makes it difficult to justify regular return. Would like to see addition of staff to attract returning customers and allow the owner to grow the establishment.

The chef cooks authentic Japanese cuisine and always prepares the dishes with the utmost care. The atmosphere is casual and most importantly clean. The food portions will fill you up and then some. Being a one man show with limited space it may take some time to prepare your food with the standards that the chef has in mind. However the wait is well worth it! With that in mind the chef will kindly inform you if the food will take too long to arrive at your table to not ruin your dining experience. (we can all get exceedingly grumpy the longer we wait for food) If i could rate Nobuya higher than 5 stars, i would.

This is my favourite ramen restaurant in the city. The service can be a little slow, but the food is stellar. We had the pork gyoza, takoyaki and chicken karage (get an order each of the karage, trust me, sharing an order just isn't enough because it's so delicious) to start with. We all had the tonkatsu ramen. It's meaty and satisfying. There are lots of toppings, which means every bite has something other than just noodles and soup in it. The soup base is excellent.

Honestly, the wait isn't that bad...and the chef isn't lying when he says "it's worth the wait". My boyfriend and I spent a total of 2 hours there, which is not a crazy amount of time to spend at a restaurant seeing as this isn't a fast food concept. We ordered the gyoza and karaage, followed by the tonkotsu ramen and everything was delicious! We will be definitely be back soon!

Nobuya is so kind and friendly and wanted to know how we came to hear about the restaurant. I mentioned that my friend and her half Japanese boyfriend recommended it, which excited him because he meets very few Japanese people! ???? The food and presentation was excellent. The appetizers were better than any other ramen restaurant I've been to - I've tried nearly a dozen chains/ restaurants in Toronto. I would come back from the karaage alone! Nobuya loves his onion and garlic, which was plentiful on the karaage and ramen. I would recommend coming Monday - Thursday as that is when it is less busy. Nobuya also said it is less busy after 10pm on weekends. The owner has a genuine interest in his patrons, which is part of what made it such a special experience. I hope his shop is here for a long, long time!

May 15 2017: After looking at a post of okonomiyaki, I googled where I could try this Japanese dish. Nobuya was luckily very close to us. We chose to go on a Monday because we noticed that it was slower as per google. We entered the cozy restaurant around 6:40pm. We were greeted with a smile from Nobu, the owner. After a conversation about how this is not your typical Japanese, I'm going to order teriyaki chicken and a california roll restaurant. We ordered the okonomiyaki with yakisoba and egg, kaarage with chips (fries), and japanese style poutine. The okonomiyaki was quite an experience. It had mayo and spicy mayo, julienned seaweed, fish flakes. It was quite savoury. The kaarage chicken was nice and crispy on the outside and moist on the inside. It kind of reminded me of Taiwanese chicken but larger and without the 5 spice. The Japanese poutine was a nice spin on the canadian poutine. No gravy but it had the spicy mayo, seaweed and other japanese condiments. It was a nice treat. It was around 7:30pm when we left and paid about $55 for two people (we also had two japanese sodas). There were 6 other people there, and one left after ordering take out in that hour. Overall, we had a great experience at Nobuya from the owner himself to the food to the ambience. I recommend going on a Monday because even Nobu himself said that it's slow on Mondays. It was just him in the restaurant, so he was the wait staff, the dish boy, and the head chef. Underneath one of the Nobuya signs it states "Worth the wait". And it really is. And for some that want to rush and get their food right away, that's not part of the experience here. The experience is to slow down our fast paced lives and enjoy what seems like Japanese comfort food.

It's like straight out from the movie, like a step into the "Midnight Tokyo" restaurant. We were greeted with the enthusiastic and the warm welcome from the owner, and then head straight for the patio. The atmosphere was pretty chill and exciting, since it's an authentic Japanese restaurant. From the appetizers Takoyaki and Gyoza to the entrée, it's so "worth the wait"! The broth is completely handmade, and each bowl has its own unique taste. I still have the lingering pork broth from the Tokyo Shoyu Ramen, and the miso taste from Tonkotsu Shoyu Ramen. ごちそうさまでした!また来ます!

Finally we were able to eat after 1 hour and 30 minutes wait for foods, everything was because they only had ONE PERSON takeover the restaurant, clearly understaffed ???? Even though the staff (owner) was very friendly, it was kind of non-sense to run a restaurant by one person. What was that??! In the end, foods were just ok! Everything we ordered has a strong ginger flavour. To come back again will be a hard decision because of the wait time. They were saying ‘Worth the wait’, in my opinion its clearly NOT! Please hire at least one more person.

The lovely owner took his time and made our bowls individually with care and love, you can tell that he takes pride in what he does! He said he sent 10 hours to make the pork broth for the ramen! This is what I called PASSION.As a guy who loves cooking, I appreciate the heart and soul of the chef. It’s my first time here and it was interesting. The only problem is... the wait time here is... a lot! Expect to spend 1:30 hour here! But the owner is awesome, and awesomely cheap! Expect to get no H2O (water) and spend money on food and drinks costing you a min of $20 per person! And the place needs extra help! Message to the owner: Cut the wait time by 85% and serve food quickly and shortly. The Owner said “I have been here for 5 years” please show you have learned to cook good food quickly within the last 5 years. In Japan, ramen takes 2 to 5 minutes to serve. The place seems like it's family runned, and the people will do their best to talk to you and help you. a good and honest place like this won't be 100% perfect but once you leave the door you are in a good mood. Wait time can be slow but the people are honest and authentic which balances everything out. If you're just out looking for a good time with a few friends and just chill around, not picky about time I honestly, highly recommend you go here.

It was okay. This place is only super busy because it was featured on CBC Metro morning a few months ago. It’s a one man tiny restaurant. Nobu the owner literally is the waiter, chef, and everything else. He has maybe 4-5 tables in this tiny joint. Very nice man. Wait time can be as bad as 2 hours. I think it would be a great place but the pouring of food tourists is kinda ruining the experience. In terms of food, it’s home cooked style noodles, nothing too spectacular. A lot of it is hype for sure.

My girlfriend and I came here on a rainy Friday night and we really enjoyed the service and hospitality that Nobu showed us. Talk about going above and beyond... he was kind enough to stay open past hours and cooked us a delicious meal. Nobu's energy is really infectious. We could really tell that he loved what he did and took pride in being a one-man show (impressive!) We ordered Japanese poutine and Okonomiyaki udon, along with grape ramune. You really get the feeling of a great home cooked meal made by a friend, as you're surrounded by tons of sports memorabilia that's quaint and welcoming. Keep it up Nobu! Dang this place is a must go and an absolute gem. The restaurant is cute af. Owner is a jack of all trades who is actually Japanese. I definitely felt I was transported ramen spot somewhere in the Tokyo burbs. I grabbed the karage gyzozo and tonkotsu. All masterfully prepared with big portions. The ramen here rates amongst the top in the GTA and easily the best in the sauga/etobicoke area. This place is a rarity in the GTA and trust me when I say this, it's worth the wait.

Glad I found this place! The appetizers like Takoyaki and Chicken Karaage were very delicious, great presentation. The Shio and Tonkotsu ramen had such great flavour, they’re each the best bowls of ramen I’ve ever had period! The friendly owner Nobu really puts a lot work and detail into the dishes and it shows. Looking forward to visiting again!

Great food and a great owner! We called ahead 15 minutes to order and the food was ready when we got there. The ramen is amazing and high quality. Karaage was so crispy. You can tell the care put into the food by the presentation. Highly reccomend, you must check it out.

DELICIOUS!! Best Ramen I’ve ever had. The Agedash tofu and seafood pancake tasted authentic and yummy. My 4 year old daughter really loved tearing into the egg and pancake. One thing about other reviews to note: this is a one man shop so you can expect a longer wait time than typical. I suggest you prepare for this and your taste buds will thank you!

Amazing experience!! For those that say it’s slow service...he is only one man doing every single job. He designed the entire place himself, acts as the server, the cook, the accountant, everything! Best food I ever had!!! Amazing customer service.

Broth for the ramen is delicious. It is for sure his signature. The texture of ramen still has room to improve; it is too soft. It will be better if he can make it chewier. Deep fried squid ball is also delicious.

Absolutely delicious authentic Japanese food. The ramen broth is very flavourful and the takoyaki is better than some I've had in Osaka! Very friendly owner. As other reviews have mentioned, this is a one-man shop so best to visit Sunday to Thursday when it's less busy. Free parking on residential side streets.

Really good street food! Its a small eat-in / take-out place. This is a dedicated one man operation. If you have the patience to wait for your food its well worth it. He does all the cooking and serving and does a great job. Really friendly, courteous and humble yet passionate, is what exemplifies the fusion of Canada and Japan. Love this place!

We just had dinner here for the first time and are already fans. Imo. the best ramen place in Toronto. We had the spicy ramen with chicken and the pork ramen with soy. We will be back for sure!

Nobuya is both the name of this humble restaurant and the name of its very passionate owner. The chef, owner and only employee is a man of his word and sometimes those words are "sorry we're too busy, the food is good, but you have to wait". The menu is small but perfect for someone looking for freshly made Japanese food that is comforting. The atmosphere is a blend of the things this city has to offer with the cultural influences I'm sure Mr. Nobu grew up with, the teams of Toronto are on display for fans as is the Japanese flag. It's a cute place with a few tables but you can just tell the owner takes pride in It, he loves that place because it expresses who he is and not what we've come to expect from restaurants (I cannot tell moxies, Montana's and turtle jack or pickle barrel apart at this point). I got to try a few dishes, unfortunately not the ramen, it was pork based, but I was given a Japanese instant noodle pack on my way out by the owner to try and absolutely loved it. I would highly recommend you visit this tiny place if for nothing else than to meet a genuine character. The chicken Karage is great as is the takoyaki, I also had a few other items and left with a full belly.

It was such a chaotic night for the owner/chef/waiter. The takoyaki was good! Agedashj tofu was unusual, it was the same taste as takiyako? Ramen and katsu don need more work. Maybe the owner was just too busy. The rice bowl didn’t have (or not enough of) the sweet katsu don sauce I liked, the egg wasn’t right. I think my ramen noodle was a bit over cooked and the broth was too overpowering with garlic. I also ate around midnight even though I got there around eight. Imagine the wait and your hunger turning into anger.

Great, cozy spot for authentic ramen. The food was flavourful and the service was top-notch. The owner spent several minutes chatting with us and frequently checked in to make sure that we were enjoying our meal. His passion for his food, the experience and his business was endearing, as was the token of appreciation that he gifted us (and other diners) as we departed. Looking forward to returning here often.

This place is unbelievable. Horrible customer service. Whoever answered that call, didn’t even try to understand the question i was asking, showed dismissive terrible attitude and kept going on and on about uber fees, which had nothing to do with what i was asking in the first place. Then that person hung up the phone. Then you are blaming me now that i had language issue?!? Think again how you should be treating your customers.
