A highly recommended stop if you don't like smoked salmon and mandatory if you like it. The texture is firm but tender. It would appear that the salmon was well prepared / seasoned / dried before smoking; and that the smoking was done at low temperature for a longer period than commercial smoked salmon. The taste of the smoke is also exceptional. Very present but which gives enough room for the salmon to taste too. The color is a beautiful bright and warm orange like the sunset in Matanie. I recommend it as is. But also on a toasted brioche bread or pure butter croissant from Always Dimanche spread with blanchon from the coastal cheese dairy. (Original) J'ai mangé du saumon fumé à NYC, dans les maritimes, ailleurs en Gaspésie, en Colombie Britannique, en Alaska et même en Suède. Croyez moi, si ce saumon fumé n'est pas le meilleur, il se classe parmi les premiers. (mais je dirais qu'il est le meilleur) Une fierté matanaise qui se perpétue depuis plusieurs générations déjà. Un arrêt fortement recommandé si vous n'aimez pas le saumon fumé et obligatoire si vous en êtes amatrice. La texture est ferme mais tendre. Il semblerait que le saumon ait bien été préparé/assaisonné/séché avant le fumage; et que le fumage s'est fait à base température pendant une période plus longue que les saumons fumés du commerce. Le goût de la fumée est aussi exceptionel. Bien présent mais qui donne assez de place pour que le saumon se goûte aussi. La couleur est d'un bel orangé brillant et chaud comme le coucher de soleil en Matanie. Je vous le conseille tel quel. Mais aussi sur un pain brioché grillé ou croissant pur beurre de Toujours Dimanche tartiné du blanchon de la fromagerie du littorale.
