There are various cuts of meat ready and packaged or you can ask for something specific from one of the butchers. I am a fan of unusual and game meats so I was intrigued by the elk and horse options. I went in Maison du Roti looking for veau for a blanquette dish, as well as some beef chuck for a Hungarian goulash. The young man working there was quite attentive and genuinely interested in helping me find the right cuts. I also found a few other items there I'm interested in using soon for some other dishes.
