I have so far, purchased the Batard, "Pain Rustique" (Rustic bread), and the Seeded Rye bread. The bread was absolutely delicious and perfectly baked! It had a perfectly crispy crust, with a buoyant, heavenly, crumb/interior. The bread had a perfectly balanced hint of tanginess. It was simply a delicious and perfectly baked bread! I will no doubt, try the other breads, but for the moment, I am simply enjoying these very much! Please note that while Fry's does not sell coffee or tea, there is a cafe directly next door.

Delicious food, carefully crafted. Fresh stone milled local wheat from the Metchosin mill is used in naturally leavened sourdough breads, hand formed and slow proofed, then baked in their wood fired oven. They also carry a small selection of deli items to pick up with pastry and bread purchases.
Great sour dough baguettes and loaves. The pretzels are amazing! A little expensive, but you get what you pay for.

The place lost it's awesome vibe after the renovation, and seems that the guy at the till no longer care about the clients. The pastries are now tucked away somewhere and the clients can no longer see them behind the glass. Not all facelifts are good, and this one is the bakery equivalent of donatella Versace.
Great bread but honestly the hours really hang me up. I don’t live in the area and when I try to work in a trip here to purchase some bread, it always seems to fall on Monday or Tuesday, which they are inconveniently not open on. Would be 4/5 otherwise for solid bread and friendly staff.
I love the European style breads, croissant and savoury stuffed pastries. On Sundays there is a line up out the door for wood fired pizzas made only on this day. If you love good bread-stuffs, don't miss this place!

Their pretzels are amazing! They remind me of the pretzels I've eaten in Eastern Europe. The bread is fabulous. Friendly counter staff too. Worth the short wait for their yummy baked goods. My favourite woodfire bakery in a city with many to choose from.
Fry’s is a great bakery all around (the olive loaf is ????), but gotta give a shout out to their Sunday pizza game. The freshest ingredients, perfectly balanced flavor, and a little bit of char for depth. Bonus; the staff are super friendly and do an awesome job ????

I bought a couple of items to go with my morning coffee. Let's say Fry's Red Wheat Bread Bakery did not disappoint. I just recently moved into a couple of minutes away. So I will deff recommend and be back for more yummy snacks.
Awesome bread!! Fry's is an absolutely incredible place. Get here early because it's super popular with locals. On a Saturday morning nothing beats one of their "breakfast in beds" and a cup of coffee. The pastry flakes off and makes a mess but it is sooooo good. You have to try this place.
Bread products here are second to none but shame about the customer service, which was awful. Spoken to with such disdain this morning ended up walking out without buying anything. The young lad who didn't attempt to help me in any fashion looked at me as as if I'd just insulted his mother - I just asked if he could advise what was in the meat pie!? Won't be going back yet know won't make any difference to them. If you enjoy being treated like sh*t then save money on going to S/M clubs and just go and ask a simple question at Fry's.

Fantastic bakery in West Victoria, far away from the tourist track. No seating inside - a few outside tables. The pastries are flakey and fantastic - I had a rhubarb cheese danish that I can't get over. Savouries as well and gorgeous artisan loaves of bread. Cash and debit cards only.
I can't get enough of this place! Their loaves are hearty and delicious. I'm a big fan of the savoury baked goods. Try the mutton roll for a quick snack. Their homemade sandwiches on a baguette are good. Keep an eye on their schedule for pizza and order ahead.

Best Bred Bread anywhere!
On November 15th I picked up a flour order, paid online, from Fry’s Bread. Baking for nearly two weeks I thought something was odd. The I realized that the “sifted red fyfe flour” was strange: clumpy, darker than normal and very fine. It reminded me of pastry flour. I called the bakery to ask if they knew what might be wrong. That person told me to call the mill. The miller at Nootka Rose (partner with Fry’s) informed me that she could “probably” identify the flour if I saw it. I explained that it was too long a drive (about 40 minutes each way). When I asked for a manager or owner to talk to, she said “No”. She explained that “It may have been a bagging error”. As a customer, one would expect a response like ”Oh, sorry to hear this. Let’s see what we can do”. She could have offered to have the flour brought out to her from the bakery for her to inspect. The next day I drove to the bakery with a small bag of the flour and a slice of the recent bread I’d made with it. First, I asked if I could purchase some sifted red fyfe flour. Unfortunately, they were out so I couldn’t compare it to what I had. I asked the counterperson if there was anyone there who might be able to identify the flour. I was pleased when she got the attention of a couple of bakers(?). One poked at the bag (I suggested that she could open the bag and then throw it out after). She said that “It might be another grain”. That’s all she could offer. I said “Thanks for your time” and bought a couple of pretzels to go. I left a tip. Simple – nobody was yelling, crying, swearing or accusing anyone of any dastardly deeds. Soon after, standing in line at Bakeology, Fry’s owner called me. I greeted him with a chipper “Hey! How ya doing?!” - I thought he was calling to help. He told me that I was no longer welcome at his bakery because I had been rude and disrespectful! Presumably, his staff had told him that someone had questioned a purchase. If anything, the staff may have sensed my exasperation but instead of helping to resolve it in some way, they misinterpreted it. I was stunned, and asked if I could ask him a question. He said “No... you’re an a**hole”. I could not believe it. Now, I was livid. Unfortunately, my frustration with the whole issue got the better of me and I couldn’t help but call him a “f***ing a**hole”. (My bad!) A responsible person, or owner, should have tried to determine what actually transpired. I wasn’t the one who said “bagging error” or “different grain”, etc. How is one supposed to address a negative outcome? Asking questions doesn’t seem to be an acceptable route to take at Fry’s. With all the owner’s history in this industry, somehow he seems to have missed the part about customer service and diplomacy. In his early thirties, I trust he has time to improve. I’ve been in Fry’s “boat” before. It’s easy to see that sometimes employees are uncomfortable trying to help someone if they are not empowered to do so. This philosophy should come from the top down. It is therefore the fault of management, not the consumer. This flour purchase has resulted in a mistake that has cost me about $55 for 10 kg of flour whose identity is unknown. I have plenty of baking (and business) experience, and nothing turned out satisfactorily with this particular flour. If I had known what it was actually milled for, the outcome could have been quite different. So. Ponder this: you go into a butcher shop and ask for minced hamburger meat. You get home and open the package to find minced chicken. What do you do? Does the butcher tell you to call the farm? I could go on... Fry’s Bread has lost this $1000+ per year revenue source, not to mention that of my friends and whoever may read this and may decide to stay away. Most online reviews for Fry’s are positive. Others have experienced negative interactions and some confirm occasional arrogance and rudeness. Customer service may not be part of the business model... CAVEAT EMPTOR! I left about 9 kg of the flour for them to identify and use. No response.

I went in there yesterday, happily, as I looooove fresh bread. I asked what breads they had that were vegan, and the girl pointed them out, unenthusiastically. I bought a round loaf of whole wheat bread and it tastes terrible and is very hard to slice because the crust is so tough. I normally buy wonderful vegan whole wheat at the Old Vienna bakery in Sooke, where the staff is happy to make vegan offerings and all their bread choices are superb. Lesson learned.

We have tried their baked goods and they were super tasty! They offer a large variety of sweet and salty baked options. The downside is that they do not have space to sit down and enjoy their food with a coffee, so you need to order to go, and get a coffee at the coffee shop next door.

It's just like a popular bakery, although it's a bit far from downtown as people come and go. Please try eating once! ! The chocolate croissants and huge sourdough loaves are a weekly purchase for us! Edit: the food is still amazing, however the service is downright appalling at their storefront. The girl at the till couldn't keep our order straight and didn't then bother with a simple "hello", "thank you" or "goodbye". Service doesn't match the beautiful bread! Luckily it is so good, I will keep coming back :')

Great wood-fired, French baking. My favourite by far is the rustic bread. It is a hearty, chewy bread that is so good, I can eat it plain. The pretzels are really tasty. The cinnamon brioche is lovely. I've tried the sandwiches and they are a great quick-up for lunch if I'm walking back from downtown. It's an awesome little bakery.
Went here yesterday morning, I got the last meat pie thing and a delicious raisin cinnamon roll. If I lived in Vic I would eat here every day. Plus all the friendly dogs around. Oh man what a great time.

Great Bakery in the center of a lovely community. As another reviewer mentioned the baked goods are a little inconsistent in quality but overall this is the place to come and rivals the more pricy Fol Epi in the area.

I'm still reeling from my experience here -- we are visiting from Seattle to celebrate my child's birthday, which happened to be today. We planned a surprise day for her at the Raptor center over an hour away in Duncan BC and had to be there by 10am -- because it's in a pretty isolated area you need to bring your lunch with you, so I did some research to find a bakery that was open at 8am that also had premade sandwiches that we could throw in the cooler for our lunch. I was excited to find Fry's Red Wheat Bakery via my internet searching; I called the week before we left and explained our situation and whoever answered the phone there assured me that I could get sandwiches that early and if they weren't in the case already it was no trouble to quickly make us two sandwiches. We arrived at 8:15am and there weren't sandwiches in the case yet so I asked about them. A man working there said they wouldn't be ready until after 9am. I explained that I had called the week before to check on this and what I'd been told. He said that he wasn't the one who had talked to me last week and no they would not make us two sandwiches. I mentioned that we could wait as late as 8:45 -- could they just throw two together in the next 30 minutes? Again they refused. There were five people working and the whole time we were there only two other customers came in. At least two of the five people were standing there with not much or nothing to do. I explained again that this was basically our only chance at having a lunch as we were on a tight schedule and being unfamiliar with the area I didn't know what else was open with sandwiches at 8am. I asked, could they charge me for sandwiches and just hand me a baguette and some loose fillings so we could make the sandwiches ourselves and again they refused. I spent the next 20 minutes in a panic walking up and down the block and then trying to search for an alternative nearby on my mobile phone using maps. Finally I found a Fol Epi bakery near us. We were thankfully able to make it out to them and to the Raptor center exactly on time so we didn't miss any of it. At Fol Epi they wished my daughter a happy birthday -- what a difference! I can't believe that Fry's Red Wheat Bakery was fine with making a 10 year old go without lunch on her birthday for literally no reason. I mean, what kind of people do that?

Truth be told, slightly hit and miss at times (that is why only 4 stars), but generally quite good bread. The bakers have been changing several times since this opened, so quality and product is not consistent, but personally I do not mind that. Generally helpful staff, and the good ones are really great. I usually buy several loaves (the batards are always nice) and freeze the extras - comes out really well, just make sure to defrost in the fridge. As a bread lover and amateur baker myself, I rate this bakery higher than many of the other bakeries in Victoria and the CRD. Recommended if you like "old fashioned" style wood oven baked bread with a proper crust and good, dense - but not dry - crumb, with a solid tooth feel. Tip: make sure to choose the loaf you want yourself - do not let chance decide.

I'm in love. Recently moved to the neighbourhood and found this place on a walk. Their bread is delicious, baguettes to die for, and pastries that are what get me out of bed on the weekends. So impressed with all their food - thanks for making Vic West feel like home!
The stolen bread was one of the best we have ever had. Organic ingredients make all the difference. It is worth its hefty price. The tortierre was stuffed with me and the other pastries were light and flaky and the flavors insanely good

I went for the pretzels and they were amazing. Some great bread available but I haven’t tried it yet. It was well worth the trip and I imagine the other products will be great if they are only half as good as the pretzels.

Fry’s pastries and sandwiches are to die for. I particularly love their savoury hand pies. While their bread has good flavour, it’s often over baked, leading to a very tough crust. This may not be an issue for some, just not my preference! They use wild yeast (sourdough) for all their bread which I do love.

Great product but there's little to no social distancing happening with their customerd out front while you wait. People walking by were going into the bike lane to get by.
Me and my mom were speaking polish while discussing what to buy, and when it was our turn to be served she ignored us. Never coming back, waste of time and bread is burnt and overpriced. If you want a taste of real European bread, go to Europe and stop saying this bread tastes like from Europe if you haven't even been to Europe.
The bread here is wonderful. I go on Wednesdays specifically to get the 7 grain bread. Perfect on its own or with some peanut butter and jam.

We like seeking out great bakeries when we travel, and Fry's was on our list in Victoria. We bought the focaccia bread, crossant, pretzel, and breakfast in bed. Everything was awesome. I particularly loved the breakfast in bed, and the focaccia. We came back again on a Saturday around 2:30 pm, and the shop was pretty much empty. So if you want to have choices, come early. Cash or debit only.

Called looking for something specific, which they had only one of and made no promises. By the time I walked there it was of course gone. BUT, they had a little mini loaf they hooked me up with that they seemingly weren't going to be selling otherwise. What a great first experience at this bakery. I will definitely be back!
I live around the corner, so have been frequenting this establishment for years. My favourite product is the alpine snail, (kind of like a more refined cinnamin bun, but made with croissant dough, the addition of sunflower seeds, and no frosting. Warmed up is best) followed closely by the pain au chocolat. Their bread is too expensive for the average person. Even though I enjoy, every now and again, the pastries mentioned above, the staff (especially the men) seem so glum, unhappy, and unfriendly. I rarely, if ever, see the staff behind the counter smiling. It's a turn-off. Also, their pastries are frequently burnt on the bottom. Please don't tell me that burnt sugar and dough is just the natural caramelization process (they have "corrected" me and my perception more than once). My taste buds say burnt, my eyes see burnt, and my 30+ yrs of baking experience knows the difference between burnt and caramelized. If the pastries are burnt, put them on sale for $1.00 off. Be accountable, and you'll get more respect, and also the motivation to bake your pastries perfectly. A little bit of variation in doneness is fine, just don't serve burnt goods. $4.00, $5.00, or $6.00 is too expensive for a pastry anyway.

Love their pain au chocolate, consistently yummy, as are all their light and flavourful European style pastries, and terrific breads. Plus the business is family owned so the folks really know their products, and seem to enjoy what they are doing - so refreshing!

I am really disappointed with their anti Covid Policy. They do not use gloves or sanitizer before touch bread, scon or whatever, and at the same time receive cash from customers.

This is our local neighbourhood bakery and we were so happy when they set up their space. The breads are fresh and the treats are amazing. Although the cost of baked goods might be higher than one might expect, you get local wholesome ingredients made by those who have a true love for the craft of baking. We enjoyed a breakfast Danish and a strawberry/rhubarb/vanilla cream Danish. Both were very nice, tasty and about the right size. We will have to try the bread next time! Cash or debit only though, so come prepared! On the weekends, there can be a line, especially with the protective steps being taken during the Pandemic.
The product is fantastic as reviewed here but trying to be a regular customer is a frustrating experience. They usually have one person making sales with everyone else working back of house and no one ever stops to help when there is a line. This causes long waits with one person collecting orders and slowly tapping at the machine while customers dig around for exact change, etc. I don't understand the business model as the product is made and sitting there, the bottleneck is getting it out the door! Expect to wait in line, and you will see lots of people take one look at the line and walk away. The other issue is inconsistent hours. There are lots of random closures and holidays which discourages driving out of your way to drop by randomly. If you can catch it open and have the time to stand around for a while you will enjoy the bread.

2 pretzels isn't enough! I went back for more in the afternoon and they were sold out! On the side note, I was there early morning and grabbed a chocolate croissant as well and I had to throw it away after two bites due to the bottom of it burnt. I called and spoke with Josh who was more than accommodating - no questions asked, he simply checked another croissant and asked if I was close by to pick another one up. I love this bakery and the quality service they provide! Thank you!

superb bread and pretzels!
The German Rye bread looked really nice although very small for the high price $8. What was very disappointing though is after driving all the way there is that we didn't buy any as amazingly they don't have a bread slicer. I can't imagine trying to cut thin slices off such a good crusted loaf!

My favourite bakery in Victoria ( a place with real compition). Their breakfasts-in-bed are to die for. Bread is fantastic and words can’t describe their Sunday pizza! A calm and friendly atmosphere!

Their rye breads are excellent. Pastries underwhelming, I am willing to pay a premium but the quality disapointed me (ham cheese croissant, pie, almond croissant). Maybe one can not be good at evth, so stick to making bread.
Dropped by and got their Danish sweet and meat pocket. Service was ok but not out of this world.

I've been coming here occasionally for years and it has never disappointed. From their pizzas to their breads, buns, donuts, sandwiches, and pastries everything is high quality and has a unique flavor you can't find anywhere else. I can see how some would find the prices steep but you are paying for a very unique product that is worth every penny. I recommend fry's to a lot of people.
Great pizza on Sundays, great pastry and sourdough breads. Walked in on a Sunday to them pumping some Ramones and grabbed a pizzam. Great people. Hidden gem
First time at the Fry's - never again! Bought Almond croissant and a Snail. Snail was $1 off, because it was smaller then usual, as the sales person offered. When I came home I found out not only it was small, it was also burnt on the bottom - inedible, and at least 2 days old. The Croissant didn't fair much better - the supposedly flaky pastry was caked together into un-chewable blob and seemed to be even older then the Snail. I spent close to $10 and threw most in the garbage. I am never going back.
Great bread. European style. Decent price for the quality you get. I love their pain rustique and their rolled pay bread (only on Thursdays).

It's marvelous. If you are visiting here from abroad, be sure to bring cash. Often, the credit card machine had difficulty with cards from the US. That said, Fry's is wondrous and well worth it: their creations are both traditional and tasty; the texture of all their pastries and loaves of bread are superb. Fry's makes real bread which is strange to have to say, but trust me: you do not know what you have been missing in the world of baking until you come here. Fry's will make you regret that it is not in your current hometown.
I don't want to overstate this, but their pulled pork hand pie was the best thing I have ever eaten. It has ruined me for all other food for the rest of time, this is both amazing and sad...

Have to agree with several other reviewers, the bread is consistently overdone and very often burnt on the bottom. The crusts are so thick they are almost inedible, although the insides are very tasty. Lots of waste. Love European breads, but these just don’t cut it. The pastries are better with lovely imaginative fillings, but again often with black bottoms. Also overpriced. Much better value at Cobbs.
Hands down, best bread in town. And probably western Canada for that matter.
My local bakery... I m very lucky to have them a short walk away. I recommend their mutton rolls and any of the breads. I tend to go between Fry's, Foi Epi and Wildfire and all are excellent, but very different from each other (you should go to each one). Going to Fry's I feel like I m going to the village baker. The staff are consistently friendly and there is something really nice about knowing who the owner is and watching him in there with the staff baking away.
